Kaleido will open on the 5th and 6th floors of the venue on 6 July at the same time the museum opens its doors after a controversial re-location from Preston.
35 metres above the Manchester skyline, Kaleido will be operated by Kudos, part of The Crown Group, which won the contract to run the restaurant in a deal thought to be worth around £12m which was completed last year.
The restaurant will incorporate a 'premier league' fine dining element designed to 'provide diners with a brand new taste experience, unrivalled in Manchester' plus a cocktail bar on the 6th floor.
Frank Bordoni
As restaurant food director, chef Frank Bordoni has designed the seasonal menu which will specialise in predomiantly British cuisine with international influences using locally-sourced produce.
"This is a stunning Manchester landmark building and we are delighted to be part of what is set to be a fantastic attraction not just for the city, but for the UK," Bordoni, who trained with the Roux Brothers and began his career at Le Gavroche, said.
"The restaurant has amazing views and we have worked hard to create a diverse menu that should provide our diners with a unique flavour of the very best of British produce, all with a twist. We love our food and can’t wait to share it with Manchester.”
Local staff
Rochdale-born Paul Riley heads up the Kaleido kitchen team as executive head chef. Riley has worked previously at The River Grille Restaurant at Thistle's The Bristol Hotel.
Together the restaurant and cocktail bar will be employing around 50 staff all recruited from the nearby area.
