The Hilton Brighton Metropole hotel has relaunched its bar and terrace with a new menu and cocktails after a renovation project which reflects the heritage of the beachfront venue.

The Waterhouse Bar & Terrace has been named after the original architect of the hotel, Albert Waterhouse, who designed the building ahead of its opening in 1890. The renovation by a local team of designers and architects features a new marble top bar and leather-studded booths inspired by private members clubs.

The new menu, created by executive chef Anthony Molnar, features traditional sandwiches, small dishes, burgers and desserts including a banana crème brûlée. Meanwhile cocktails from head barman Gyorgy Piros have been added to the bar offering with diners able to choose from a selection including a frozen martini named a Pavilion Blush.

Guy Hilton, general manager of the Hilton Brighton Metropole said the renovation was designed to broaden the appeal of the bar beyond hotel guests to people enjoying the local nightlife. “We are very excited to unveil the new Waterhouse Bar & Terrace and look forward to welcoming guests in for a drink or a bite to eat in what promises to be the new hot destination in Brighton.”
