Brindisa Tapas Kitchens acquires former Saf restaurant in Shoreditch
Tramontana Brindisa tapas restaurant will open in Shoreditch on the former Saf site in Curtain Road following an off-market deal with a private landlord. Brindisa Tapas Kitchens secured a long-term lease on the 3,000sq.ft site, arranged on ground and basement.
Opening in August, Tramontana Brindisa will offer over 100 covers and have a different menu offering to the Tapas Brindisa restaurants in London Bridge and Soho, adding to Brindisa’s portfolio which also includes Casa Brindisa in South Kensington and Our Chorizo Grill in Borough market.
“It will be a Brindisa tapas restaurant with a different style of menu from the previous sites,” Linton told BigHospitality. “It will showcase cooking from along the Mediterranean coast, going all the way from France to Almeria.
“We’re also looking at specifically concentrating on cookery from Alicante, because that’s where the chef’s from. As a wholesale business, Brindisa covers the whole of Spain in terms of ingredients - so there was no reason to limit our menu in terms of choices.”
Hard work
Last year, Linton told BigHospitality that Brindisa was not planning to roll out lots of Tapas Brindisa restaurants and following this latest acquisition she maintains that philosophy.
“We’re not going to be setting up a chain of restaurants that are all going to be the same,” she added. “We’re not changing our strategy at all. This comes off the back of 24 years if hard work.
“I’ve had so many offers from the city, saying ‘oh we can help you roll out and you can have 100 restaurants in six months.’ But I just don’t want that – I’ve just said no to that kind of development all the way along.”
Earlier this year, Boqueria, a new tapas restaurant and bar,opened in South London,with other recent Spanish restaurant openings including Tapas Revolution and Iberica.
