Jason Atherton to open restaurant in Singapore

Jason Atherton is to open a restaurant in Singapore in June called Pollen.

The UK-based chef, who opened his flagship Pollen Street Social restaurant in London last April, already operates a small tapas bar, L’Esquina, in the city’s Chinatown district.

Pollen, designed by Antonio Eraso will have a Mediterranean theme and will seat 120 diners over two floors.

It will be the flagship restaurant within the ambitious Gardens by the Bay South development, overlooking Singapore's Marina Bay.

It is to be housed within a giant conservatory called the Flower Dome, which will have its own controlled micro-climate, in which members of Atherton’s team aim to grow their own herbs and vegetables for the restaurant.

Atherton, whose London restaurant was voted Best Newcomer in the National Restaurant Awards and which picked up its first Michelin star last year, also operates a hotel-restaurant in Shanghai, called Table No 1.
