In an exclusive interview with Restaurant magazine for its December issue, the man behind Le Caprice and The Ivy, also talks about his latest steak restaurant 34, which opened last month in Mayfair, London.
On working with Keller, Caring, said they had met when the chef was operating his French Laundry pop-up at Harrods earlier this year and had talked about working together. Caring believes Keller's more accessible bistro concept Bouchon, which has three sites in the US, 'could really work' in London.
The restaurant mogul also talks about his plans for the business as a whole with his ambitions to 'grow and keep acquiring prime sites in central London'.
"We don't see ourselves moving outside London, it's now the capital city of the world and we have a strong position here," he said.
