Corrigan is spokesperson for the Alliance, which launched in September this year and has already gained the support of some of the UK’s top chefs including Michel Roux Jr, Francesco Mazzei, Brett Graham and Marcus Wareing.
Slow Food UK works to safeguard endangered and traditional produce in a bid to maintain the biodiversity of British food products. Chefs across Britain are being urged to join in by using a catalogue of forgotten foods, known as the Ark of Taste, on their menus.
And Irish-born Corrigan, who heartily believes in the ‘farm to fork’ philosophy, has done exactly that at his eponymous Corrigan’s Mayfair restaurant.

The delicious new menu features Reggie Johnson butter poached chicken, red cabbage and British and Irish Artisan Cheeses, all of which are Ark of Taste products in danger of dying out.
"We overlook suppliers at our peril,” he said. “Produce is what we are all about, or should be about. The sea, the land, gives us precious produce to work with.
“The Ark of Taste is a brilliant way to flag the importance and value of so many delicious foods and I'm proud to play a small part in growing the audience for this initiative."
Slow Food UK chief executive Catherine Gazzoli added: “We are thrilled to have already received such a fantastic response; and from some of the country’s top chefs. It’s a very exciting time for us and I’m looking forward to seeing what the next few months hold for the Alliance.”
The Slow Food UK Chef Alliance was launched in partnership with Highland Park whisky. All restaurants are welcome to join, but chefs must be members of their local Slow Food group and must pledge to use produce listed by Ark of Taste, when appropriate, on their menus.
