Midlands-based pub and restaurant operator the Ever So Sensible Group has acquired its 11th site as part of expansion plans for the business.

The company, run by former M&B executive Chris Bulaitis, has bought the lease on the former Fothergills bar and restaurant in Nottingham, just yards from its pub The Castle, and intends to transform the new site into a bistro-style pub before opening at the end of the month.

Managing director, Bulaitis said he'd had his eye on the site for several years and was keen to restore the building to its former glory.

He said: “Having The Castle pub just a few doors away means that we’re well aware of the potential the area holds in terms of footfall. With views of Nottingham Castle and outdoor seating areas, it’s a big draw.

“The building itself is iconic in terms of architectural heritage, having been designed by Watson Fothergill, and previous incarnations of the site haven’t always reflected that.

“The ultimate aim is to create a pub with a comprehensive and traditional drinks menu, including ales from local micro-breweries, and an international, bistro-style food offering. We’ve taken time to ensure that this will complement our current operations at The Castle and encourage customers to visit both venues.”

Expansion plans

The Ever So Sensible Group, set up in 2001, recently opened its 10th site, the Horse & Groom in Lincoln. It is also planning to open its 12th site just outside Nottingham early next year.

“We’re undergoing a period of growth,” said Bulaitis. “There are many empty sites across the East Midlands, like the Horse & Groom and Fothergills, that have great potential. We’re actively seeking new venues and I expect out portfolio to increase steadily over the next 12 months."

The company's current portfolio includes Dogma bar and restaurants in Lincoln and Nottingham and Le Mistral Bistros in Nottingham, Wirksworth, Sherwood and Bakwell. It also owns The Marquis in Wellington and Bad Juju Tiki Bar in Nottingham.
