Michelin-starred chef Shane Hughes has been appointed head chef of London-based French Restaurant Roussillon.

Hughes previously spent five years running the kitchens at Ynyshir Hall in Wales. He has also spent time at The Connaught Hotel, The Landmark and Whatley Manor.

His brand new range of menus for Roussillon are a take on modern European and classical French cooking with produce sourced from all over the UK and France.

Sample started dishes include pig & crayfish and foie gras. Main courses include beef & lobster, lamb and turbot. Warm treacle tart, vanilla soufflé and chocolate croquette are among the deserts.

Roussillon’s evening à la carte menu is priced at £65 for three courses, while the Roussillon evening tasting menu features eight courses, priced at £75. The award-winning Garden Menu is available at dinner and costs £65 for eight courses.

The restaurant, located at 16 St Barnabas Street, opened in September 1998 with chef-patron Alexis Gauthier in the kitchen, who left to set up his own restaurant in Soho last year. The restaurant held a Michelin star between 2000 and 2010.
