A new basic online training tool for first-level workers handling food has been launched and is available free on the British Hospitality Association website.

Food Hygiene Training for All has been created by the European Federation of Food, Agriculture and Tourism Trade Unions (EFFAT) and the European Federation of Contract Catering Organisations (FERCO). It is principally aimed at the food and service management sector but is applicable to every catering establishment.

Cocoms Limited, on behalf of EFFAT and FERCO, drafted the technical content and developed the tool with the support of social partners in several Member States. It is available in seven languages.

John Dyson, director of Cocoms and food and technical adviser to the BHA, said: “The main objective is to offer an innovative food hygiene training opportunity to first level food handlers. But it should also contribute to the development of in-house training in SMEs in the hospitality sector across Europe.

Step-by-step approach

Food Hygeine Training for All includes an introduction to HACCP (hazard analysis and critical control points), personal-hygiene-safe food handling, and health and safety at work. It follows a step-by-step approach and is divided in different modules, focusing on the tasks usually performed by first- level food handlers and on the main critical points they go through while preparing/serving food.

The tool also includes multi-choice questions to establish the knowledge of those who have taken the training; there is an option for trainees to obtain a certificate.

"We believe this will be a valuable tool to help operators in the catering sector and beyond meet stringent food hygiene standards. It will be particularly beneficial for SMEs," Dyson added.
