Under the extended partnership, Pure Pop-up Restaurants & Events, part of the bar, restaurant and event management company Evensus, will run a 45-cover restaurant and bar called Pop.
Pop's head chef Neal Brunning, who joins the 51-bedroom hotel from The Courtyard in Brighton, will also be responsible for supplying conference and banqueting menus, room service and private dining in the hotel's Karaoke pods.
His menu will reflect the hotel's seaside location and use local suppliers with dishes including Risotto of Crab with Avocado Ice Cream and Pan-seared Wild Sea Bass Fillet, Crab beignet and fennel cream
First hotel collaboration
Nicola Delmege, owner of Brighton pub PV @ The Jury's Out since 2003, will manage the project with Evensus managing director Jerome Ibanez retaining overall management of the partnership.
Despite having experience in running pop-up restaurants and events, Ibanez said it was the first time in his company's 15-year history that it had collaborated with a hotel on a more permanent basis.
