Compass, Roux and Orrery appointments
Compass
Fiacra Nagle has taken on the role of Managing Director for Compass Group Ireland, starting this month. He replaces replaces Gaétan de L’Hermite, who will take up a role as director of strategic development for Compass Group’s emerging markets in Asia.
Nagle was previously CEO of O’Briens Sandwich Bars and helped grow the business into a leading Irish franchise business, with 300 stores worldwide. Prior to that, he spent 15 years in international banking and project finance, latterly as Head of Telecom Finance for KBC Bank. Before joining Compass, Nagle was commercial director of ODC Group, the owner of the UK’s two largest on-demand printing brands: Prontaprint and Kall Kwik.
Ian Sarson, group managing director, Compass Group UK & Ireland said Nagle “comes to us with a deep understanding of the Irish economy and the industry and I feel sure that under his leadership our business will continue to grow through providing great service to our clients.”
Roux at Parliament Square
Restaurant Roux at Parliament Square has appointed bartender Esther Medina Cuesta as bar manager.
Cuesta moved to London from Spain in 2002, when she was learning the basics of bartending. She has since worked at a number of venues in London, including the whisky bar Albannach on Trafalgar Square, Ronnie Scott’s in Soho and most recently Roast in Borough Market. Earlier this year, she attended the 3rd International Cognac Summit and was named “one of the most powerful women in the drinks industry” by Channel4 Food.
In her new role at Roux at Parliament Square, Cuesta will be responsible for the re-design and re-branding of the restaurant bar, which will include new décor and new menu concept.
Michel Roux Junior said: “Since launching last year we have worked to ensure that all guests enjoy the highest level of service from our staff. Esther’s expertise and flair will enable us to develop our bar offer and firmly establish it as one of the go-to destinations in Westminster, whether guests are visiting to drink or dine.”
Orrery
D&D London’s Marylebone neighbourhood restaurant Orrery has appointed its head sommelier, Shana Dilworth, as restaurant manager.
Dilworth joined Orrery in February 2010, following previous roles including head sommelier at Skylon, restaurant manager and wine director at Andaz hotel, and assistant manager and sommelier and Jardinière in San Francisco.
She said: “I am hugely excited about this move, and look forward to improving our service even further, in particular through our new lunch menu which is designed to offer Igor’s brilliant cooking quickly, and at excellent value. I will also continue to ensure Orrery’s superb wine list is as diverse as our regulars have come to expect.”
