ETM to open two pubs at London Montcalm Hotel
The first venue, situated on the former site of St Paul’s Tavern, part of the Whitbread Brewery building on Chiswell Street, will feature a 20-cover bar plus a 100-cover restaurant with private dining room serving Modern British cuisine.
It is currently undergoing a thorough refurbishment and is due to launch in May, when it will be open from 7am for breakfast, lunch and dinner.
The second venue, also within the grade-II listed building will take the form of a traditional British pub with a focus on real food and wine. Previously known as The King’s Head, the pub will feature an open kitchen with a charcoal grill and three rotisseries, a 40-cover bar and 100-cover dining room, plus three additional private dining rooms.
It is due to launch at the end of the summer for lunch and dinner.
The names of both venues are yet to be announced.
Food and beverage operation
Both venues will form part of Montcalm Hotels’ newest property, the 230-bedroom Montcalm London City Hotel, with access available from both the hotel and the street.
ETM Group will also be responsible for the hotel’s entire food and beverage operation, including conferences, events and room service.

ETM also operates The Hat & Tun, The Well, The Botanist, The White Swan, The Gun, The Prince Arthur, The Cadogan Arms and The Empress of India – all in London.
