Rasmus Kofoed: Business at Geranium has “exploded” since Bocuse d’Or

Rasmus Kofoed, the Danish winner of the 2011 Bocuse d’Or and chef proprietor of Geranium in Copenhagen, has defied the odds and won a bronze, silver and now gold trophy in what is known as the Oscars of the culinary world.

The celebrated competition chef visited the UK last week to attend a butchery masterclass held by Quality Meat Scotland, which supplied the Scotch Lamb for this year’s Bocuse d’Or final, where HRH Princess Anne awarded him and runner-up Tommy Myllymaki from Sweden with medals.

BigHospitality spoke with Kofoed, who has now announced his retirement from the competition in order to concentrate on his own restaurant business, Geranium in Copenhagen, which he runs with partner and Bocuse d’Or coach Soren Ledet.

Here he reveals the secrets of his Bocuse d’Or success, what impact the competition has had on his business, and why he’s retiring on top.
