The chef, who opened Bistro Bruno Loubet last year at The Zetter Hotel in Clerkenwell, is now on the hunt for a second site to launch a “more refined” restaurant.
Possible locations scouted by Loubet so far include Marylebone, Kensington, Notting Hill and Baker Street.
But speaking to BigHospitality, Loubet said he was not necessarily keen to open another hotel restaurant.
“The next one will definitely not be a hotel restaurant because we really are looking for a standalone site to do this project,” he said.
“But who knows, my partner Mark Sainsbury may decide to buy a hotel somewhere so obviously we would then build a restaurant as part of it.
Feminine style
“With the next one though I’d like to step up and do something slightly more refined, more feminine, because Bistrot Bruno is very bolshy and in your face. I want to bring the next one to a different level of dining.
“We want to establish the foundation of what we have done up to now, because Bistrot Bruno works very well, it’s been fantastic, but now I think it’s important to have something which is sealed identically, reassure people that it’s not just a flash in the pan.”
Loubet opened his eponymous restaurant at The Zetter in February 2010 serving the same modern French bistro style of cooking his previous two UK restaurants, Bistrot Bruno and L’Odeon were renowned for.
