Boisdale and Roux at Parliament Square appointments

Restaurant group Boisdale has appointed former Conran chef Andy Rose as an executive chef across three of its restaurants.

Rose’s first major project for the group will be to launch Boisdale’s new restaurant at Canary Wharf, due to open its doors in March 2011.

Speaking to BigHospitality this morning a spokeswoman for Boisdale said that Rose will also be working alongside head chefs at the group's Belgravia and Bishopsgate locations.

Rose, who is known for his expertise with Latin cuisine, is now developing the menu for Canary Wharf, which will feature British classics such as Steak and Kidney Pudding and Homemade Scotch Eggs and Pork Pies.

Meanwhile Roux at Parliament Square has appointed Toby Stuart as its new head chef.

Stuart, who was most recently senior sous chef at Galvin at Windows at the London Hilton Hotel, has worked across the UK and France in Michelin starred restaurants for the past 13 years, including L’Escargot, The Square and Auberge du Lac.

Charlotte Moorhouse, operational manager at Restauarant Associates which operates the location with Michel Roux Jr, said: “We are gaining a strong reputation for the consistency and skill of our kitchen at what has become a popular destination in the Westminster Village. Toby was selected by Michel Roux Jr from a very high calibre shortlist built on these standards.”
