The New Angel and Floridita chef appointments

The New Angel in Dartmouth and Floridita in London both appoint new head chefs

The 10 in 8 Fine Dining Group has appointed a head chef to lead the kitchen at it’s latest acquisition The New Angel in Dartmouth.

Darren Brown, formerly head chef at the Michelin-starred West Stoke House in Chichester, West Sussex, joins the group’s brigade of chefs that currently features Alan Murchison, Will Holland and Chris Horridge.

While Murchison will remain executive chef of The New Angel, Brown will design a modern British menu with a French accent when he joins in January 2011.

Richard Pursey, chairman of the 10 in 8 Fine Dining Group, said: “Darren strengthens the 10 in 8 brand and whilst he will be permanently based at the New Angel, he will also help mentor some of our younger chefs coming through the ranks at our Fine Dining Academy. I know he will be an inspiration to them all.”

Floridita

Meanwhile, Cuban restaurant Floridita in London’s West End, has also appointed a new head chef.

Richard Sawyer joins the restaurant from Rules, London’s oldest restaurant, where he held the position of executive chef.

He brings with him experience working at Le Talbooth (where he gained a Michelin star), The Greenhouse, and alongside Oliver Peynton with whom he helped open Somerset House and the OXO Tower.

Sawyer will continue to develop the Cuban and Latin American flavour of Floridita’s menu, and will be introducing a new steak tasting menu.
