Brenham Magee has opened his new grill restaurant, located above his newly launched bar in London’s Fulham.
Brasa, which is based around a charcoal grill from the Basque mountains in Spain, will be run by head chef Danny MacGechan, who was previously at the gastro-pub Paradise by Way of Kensal Green.
The 80 cover restaurant includes a private dining area for 25 people and allows diners to see the chefs cooking over the grill for a “sense of theatre”.
Theatre in the kitchen
“The grill is the most passionate part of the whole place. I have a team of talented chefs, and everyone was amazed with it when it arrived. It’s basically a barbeque in the kitchen, and it’s all manual,” Magee told BigHospitality.
“There have been all kinds of different methods of cooking fads and fashions over the years, and now it’s back to basics, that’s what people really want and this is an amazing way to get it. The smoke becomes an ingredient.”
Menu
Mains from the Asador Grill include Mersham Pheasant, Sea Bass, Longhorn T-Bone, Dexter Sirloin and Herdwck Lamb. Other items on the menu include Spanish-style Pintxo dishes, such as Organic Oysters & Merlot Vinegar, York Ham & Quail Egg, Swordfish & Peppercorn Saifiana, Spiced Leg of Lamb and Iberico Ham.
The new restaurant, currently in its “soft launch”, is located above Magee’s new Broadway Bar and Grill. The 300 capacity venue – a “brasserie-style cocktail bar” – was opened last month.
