Charcoal grill is heart of new Fulham venue
Operator Brenhan Magee has launched a new bar and grill restaurant in West London, which he says will be taking a “modern back to basics approach”.
At the heart of the 15,000 sq. ft. Broadway Bar and Grill is a charcoal grill, shipped over from the Basque hills in Spain.
“The grill is the most passionate part of the whole place. I have a team of talented chefs, and everyone was amazed with it when it arrived. It’s basically a barbeque in the kitchen, and it’s all manual,” Magee told BigHospitality.co.uk.
“There have been all kinds of different methods of cooking fads and fashions over the years, and now it’s back to basics, that’s what people really want and this is an amazing way to get it. The smoke becomes an ingredient.”
Two-tiered approach
The Broadway Bar and Grill is a 300 capacity venue on London’s Fulham Broadway, which seats 130 and occupies the ground floor of a three-story building. The opening of the ground floor was held last night, while the first floor of the building will be dedicated to a restaurant, due to open later this month.
The venue will have a New York loft-style feel, with exposed brickwork, 1930’s-inspired tiling and mirrored panels.
“It’s urban but comfortable,” explained Magee. “It’s the modern way of design, it brings out the features of the building while the light furnishings soften it up.”
A key priority for Magee, who has spent 20 years in the industry, is quality and service. “The best upsale is when you get someone to come back. 80 per cent of my business is repeat business… Quality and service are paramount.”
