The 145-cover restaurant will feature a top floor dining room with downstairs cocktail bar and private function space, designed once more by architects Softroom.
While each of Wahaca’s restaurants have been designed with a strong environmental focus, the Wardour Street site will be specifically assessed under the BREEAM guidelines that ensure the sustainable design and construction of a project.
Sustainable restaurant
In a bid to boost its green credentials, the Wardour Street site will incorporate a water efficient shower to encourage staff to walk or cycle to work, two unique waste rooms for the recycling of the business’s oil, glass, food and cardboard, plus the ethical sourcing of British meat, sustainably-caught fish and seasonal vegetables.
Last July Selby told BigHospitality that he and Miers were considering further expansion plans within London, but would choose sites out of ‘passion and not because we have to’.
Wahaca Wardour Street will serve the same Mexican street food menu as its sister sites in Covent Garden, Westfield and Canary Wharf.
Vietnamese restaurant chain Pho is also due to open a new site in Wardour Street on the former site of Italian Graffiti later this summer.
