Michelin-starred Scottish chef Tom Kitchin has revealed he is to open a second restaurant in Edinburgh’s city centre in July.

Castle Terrace, situated underneath Edinburgh Castle, will mirror the ‘nature to plate’ philosophy of Kitchin’s existing eponymous restaurant in Leith, using primarily seasonal Scottish ingredients.

Run by the same management team as The Kitchin, Castle Terrace will see former l’Arpege and Swissotel Istanbul chef Dominic Jack lead the kitchen as chef patron, having previously worked with Kitchin as commis chefs at Gleneagles.

Jack said the pair had been looking for a second site for a long time, but they both felt that Castle Terrace would bring ‘something new’ to Edinburgh.

“I certainly feel there’s a market for something new in Edinburgh’s city centre and with the strength of The Kitchin brand, and the entire team behind me, I have a fantastic platform to launch from,” he said. “I’ve been working alongside Tom for the past year and a half, getting to know the Scottish market, meeting the best suppliers in the country and looking for the right location.

“The next few months will be a very exciting time for all of us."
