Albert Roux is to open another two restaurants under his name at hotels in Scotland following the success of his first restaurant Chez Roux at the Rocpool Reserve in Inverness.
Roux will open a restaurant, also called Chez Roux, at the newly refurbished Inver Lodge Hotel above Lochinver in Sutherland when it re-opens its doors to guests in April.
Roux said he was attracted to Inver Lodge's remote position and access to top Scottish ingredients.
"Chez Roux is committed to using locally sourced Scottish produce, Inver Lodge Hotel is in a unique position as they will have daily access to some of the freshest fish and finest ingredients. Our new menu will focus on traditional French homemade cooking using the best Scottish ingredients that we have readily available here in Lochinver," he said.
Management
Inver Lodge is owned by Robin Vestey, but managed by Inverlochy Castle Management, which also runs Greywalls, Inverlochy Castle and Blanefield House near Turnberry. The company took over the management of Rocpool Reserve last year.
Vestey said: “Inver Lodge Hotel’s refurbishment, along with the opening of Chez Roux will put Inver Lodge on the map as a premier hotel in North West Scotland. We are hoping that the transformation of the hotel and its restaurant will prove a hit both attracting tourists to the Sutherland, whilst offering our local clientele a restaurant that they too can enjoy.”
Roux's third Scottish restaurant will open at the Greywalls Hotel, east of Edinburgh and overlooking the Muirfield golf course, in May.
