The French chef, who has spent the last eight years in Australia working at Bruno’s Tables and Baguette in Brisbane, and Berardo’s in Noosa, returned to the UK in the summer to assist Pierre Koffman with his pop-up restaurant at Selfridges.
Bistrot Bruno Loubet at The Zetter will serve breakfast, lunch and dinner menus that feature the hallmark modern bistro style of cooking as his two previous UK restaurants, Bistrot Bruno and L’Odeon.
Mark Sainsbury, co-owner of The Zetter, said: “We are thrilled that Bruno is joining The Zetter. The Clerkenwell area is increasingly becoming a vibrant destination for restaurants, bars and hotels, and Bistrot Bruno Loubet will be a fabulous addition to the scene.”
Loubet and The Zetter
Loubet was named Young Chef of the Year in 1985 by the Good Food Guide, before being poached by Raymond Blanc to take over Le Petit Blanc as chef/ manager in 1986. Loubet also worked at Le Manoir aux Quat’Saisons and Four Seasons at Inn on the Park, where he earned a Michelin star at the age of 29.
The Zetter recently acquired two townhouses behind the hotel on St. John’s Square, which will be renovated into a private club and bedroom venue ahead of its launch on November 2010.
