Aiden Byrne to open fine dining restaurant

The former Dorchester Grill head chef is set to open his second venture in less than a year - a fine dining restaurant in Cheshire

Aiden Byrne is to open a fine dining restaurant in the upmarket Cheshire village of Prestbury in November this year. 

The announcement comes seven months after the chef opened his first solo venture - The Church Green gastropub in nearby Lymm.

The former head chef of the Dorchester Grill will re-launch the White House restaurant as Aiden Byrne at The White House following the completion of a planned £500k refurbishment.

Byrne will be based at the restaurant, but will still work Monday and Tuesdays at The Church Green when the White House restaurant will be closed. Byrne will transfer several of his existing kitchen brigade to the new restaurant, leaving his brother Louis in charge of the pub. 

“Prestbury has the highest concentration of wealth outside Westminster; it's footballer and old money central, so the restaurant will be more high end than the Church Green. There'll be canapes, appetisers and all that kind of thing,”  Byrne told BigHospitality.

Menus will include an a la carte with a choice of nine starters, main courses and desserts,  and two tasting menus, one at £55 and one at £90, as well as a daily changing set lunch option.

Byrne, who won his first Michelin star as head chef of Adlard's restaurant in 1995 at the age of 22  says he's aiming to win “at least” one star for the White House.

“I was desperate for a Michelin star at the Dorchester but the red tape at the hotel got in the way, so its great to be in a position to finally do it for myself,” he said.
