The Royal Institution in London’s Mayfair will for the first time launch a public restaurant on its premises, with a menu designed by Anton Edelmann and his prot?g? Julian Ward.
The Time and Space restaurant will open next month as part of the £22m refurbishment of the grade I listed building, the been home of ground-breaking science and 14 Nobel prize winners.
The restaurant will occupy a large area of the ground floor around a magnificent day-lit atrium, serving a modern English menu devised by Executive Chef Edelmann and Head Chef Ward. Dishes incorporate elements of molecular gastronomy, and include oxtail ravioli with creamed leeks and truffle; poached pollock, broadbean butter and tarragon emulsion; and spicy tiger prawns with lemon curd sauce.
The RI will also be opening a caf? and bar area for serving light lunches and pre-dinner drinks. There will also be an events timetable with presentations by some of the UK’s top chefs, who in the past have included Heston Blumenthal and Raymond Blanc.
The restaurant will launch on September 8 strictly to RI members, although the public will be able to enjoy Edelmann and Ward’s menu later on in the month.
