Wolfox group launches FUMI in Brighton

Brighton-based coffee shop and restaurant group Wolfox has launched a new concept designed to merge ‘Japanese culinary culture with the local produce of Sussex’.

Called FUMI, the Circus Street restaurant, which was first announced last year, will serve a menu of breakfast and brunch including sushi and bento boxes by day, before transforming into a fine dining restaurant in the evening.

“At FUMI we want to bring everything that is good about the beautiful countryside of Sussex together with hand-crafted Japanese food, including well-known small plates like sushi, sashimi and tempura combined with exotic, lesser-known chef’s speciality main dishes, changing daily and using superb seasonal produce,” says Fabio Lauro, Wolfox CEO.

“But our main ingredient is sustainability and we have tried to build this into everything we do, from the décor to our ingredients sourcing and making all the food and drink we serve in-house, down to our sauces, pickles and wasabi.”

FUMI’s launch follows the success of Wolfox’s plant-based Japanese restaurant Kusaki, which opened on New England Road back in 2021 and is currently listed in the Michelin Guide.

The restaurant’s evening menu features a range of small and large sharing and sushi plates including Kagoshima wagyu A5 beef tataki with ponzu; cured mackerel maki with kizami wasabi; and roasted black cod, miso and black rice.

A four or six course omakase-inspired menu is also available.

Wolfox has become a major player within Brighton & Hove’s food and drink scene in recent years, operating a hotel and various restaurants and cafés.

In addition, it now has sites in nearby Haywards Heath, as well as in Leeds.
